Rosemary Chicken:
8 oz thinly sliced, skinless chicken breast, cubed
1/3 c. balsamic (or more to taste)
1 T rosemary spice
1 t. garlic salt

  • Mix all ingredients together and let marinate for at least 30 minutes (unless you are starving--then just cook it!!)
  • Spray pan with cooking spray and cook over medium heat until chicken is fully cooked. 
  • Eat. Happiness is simple. 

Makes 2 Servings
Carbs: 3
Protein: 28g 
The Salad:
Mixed Salad Greens
Mushrooms
Cucumbers
Sweet Pickled Red Peppers
Blueberries
Avocado
Toasted Almonds (or pine nuts, pecans, etc)
Goat Cheese

Dressing:
Balsamic Vinegar
Olive Oil
Mustard (Preferably Dijon)
1-2 packs artificial sweetener

Lo Carb Chocolate Truffles:
1 scoop protein powder
1/4 c. flax meal
1/2 T coconut oil
1/4 c wheat bran
1 T peanut butter or     powder/peanut flour
1/4 c. coconut flour
1/3 c. light coconut milk
4 oz 72% dark chocolate

  • Combine all ingredients except chocolate to create dough.
  • Roll into 8 balls
  • Melt chocolate in a small bowl
  • Dip balls in chocolate to coat
  • Refrigerate for 30 min. or more.
  • Take balls in a room and lock the door. There are not really enough for sharing...
Makes 8 balls
Carbs: 3g
Protein: 4.5g



Thai Peanut Chicken Wraps:
Sliced grilled chicken breast-8 oz
Thai Peanut Sauce-1/4 c.
Hot Chile Oil-1 tsp.

Sugar Free Apricot Preserves-1 T
Unsweetened Coconut Creme-1/4 c.
Unsweetened Shredded Coconut-1/4 c.
Boston Lettuce (whole leaves)
Thinly sliced cucumber strips

  • Place all ingredients except lettuce and cucumber in a bowl, mix to coat cooked chicken thoroughly. 
  • Place in a pan on low flame and heat until warm.
  • Place a heaping spoonful of chicken on a lettuce leaf.
  • Add strips of cucumber and roll up.
  • It's a wrap!!

         Makes 2 Servings
         Carbs: 10g
         Protein: 33g
Double Chocolate Torte Dessert:
1 pkg. Dixie Diner Carb Counters Double Chocolate Torte Dessert Mix
2 T butter, melted
1 c. hot water
1/2c. heavy cream/whipping cream


  • Melt butter and set aside.
  • Melt package of chocolate chunks and set aside
  • Combine Bag 1/crust mix with butter and press into a greased pan.
  • Whisk together cream, water, melted chocolate and contents of Bag 2 until thick and creamy.
  • Spread chocolate mixture over crust and refrigerate for 30 minutes or until you can't stand it anymore (20 seconds)
  • Plotz. 

Makes 9 servings (Ha!)
Carbs: 2g
Protein: 4g
